Old "yuumy" favorites

I was listening to a talk show CFRB (Toronto), the discussion was about what do you remember as a favorite yummy food that your mother used to make or buy when you were a kid, it could be baked good or a meal. (The mothers called in too saying what they used to make that the kids loved). One person called in saying his mother used to make rice crispie squares with cheeze whiz spread on top, (yuk), another one said they loved a peanut buttery/jam/ banana loaf.
What I remember was sometimes when my mother went downtown, she would come back with this pie/cake from Kresgies or Woolworth's, she said they called it Boston Cream Pie, but it wasn't a true Boston Cream, it had no chocolate. It was to die for, melt in your mouth and light as a feather. It was like a light sponge cake with a light whipped cream in between & on top, (I think).  I'd love to make one if I knew what was in it. Does anyone remember ever having this kind of pie/cake?
What were some of your favorites as kid in Verdun?  Another favorite of mine was Hamburger Roll-ups.

Have a yummy day !

Carole

Hello Claroleca,...........   Interesting ........      I Remember a few things that I liked,& I'm sure there were many, but a few I liked:     Tomato Soup Cake ( sounds weird, but it's like a spice cake, with some sort of white icing on it too)     another was  Apple Dumplings with either a white or brown sugar type of sauce............very sweet,...Yikes !!!     Dutch Apple Pie with a thick crust ( was it Brown Sugar??)    and also a Rice Pudding ,that had raisins in it ?                     ..................................................HF&RV           .............................Remember getting to lick the spoon,or the bowl, that the icing was mixed in........                           ..oh yea,.Butter tarts & the other Xmas goodies.............           hahahahaha Yikes ,. Hi Les,   I like Tomato Soup cake too and have made it a few times.   My mother used to make a dessert, "Lemon Snow". It was a favorite too!   Of course there was tourtiere which was an oldy goody, but my dad always liked to have Heinz canned spaghetti with it, not a favorite of mine.   Carole

mmmm, I love mille feuilles, I think they are called napolean's here or something close to that. The Scotch meat pies were the best too. Vachon pies and Mae Wests, you can buy Mae Wests here now. They used to be a favorite as well.  Lad, I'd love to see what those square licorice pieces are, licorice is one of my favorites.  So, what else was a favorite that your mother used to make?     Carole

The licorice squares are called allsorts and you can buy them at Walmarts with the candy or at Superstores here in bulk and off the peg at Safeways in bags - we hated the ones with the seed like candies on them pink and blue whe I buy bulk I dump those off there were also tube pieces all licorice or filled with white - My favourite were an ice cream pie it came in caramel and strawberry - sundaes at Woolworths in thos tall glass things - orangeade at Murrays on a hot day - Chicken pies at Steinbergs that came in glass pyrex bowls - my grandmother collected those.  Corn on the cob from the peddler $1 a dozen oozing butter- Christmas turkey dinner with irish potato dressing - spaghetti at an Italian friend - she came for Sunday dinner and we went for Spaghetti Thursdays. Boston Cream pie is just a sponge cake with custard in the middle and grenach (melted chocolate and heated 35% cream) cooled and poured over cake.  Dark pumpernickel bread from the main - I always but the rye and pumpernickel swirl bread when I find it on visits to Montreal. My fathers date and nut loaf - I make that sometimes lemon merangue pie - make that too Strawberry shortcake.  Pom oatmeal bread and Pom light fruitcake still love that.

I never thought of buying the licorice in bulk. Will do now! It was very good. Mince stew was a goodie & sopjped it up with fresh bread, it was only made when my dad worked afternoons, he wouldn't touch it so it was real treat for the rest of us!     Carole

les__f MSN said...

Gary,.now those sound good,.i wanna try them,... This is all I've found so far ( are these even close to your Mom's dinner) ? December 4th, 2006 by mike d. in Yesterday I felt like cooking. I haven’t really made a homecooked meal in awhile and needed to feed that fever. So I pulled out the cook book that Theresa put together for me a few years back and decided to make my Nana’s famous Porcupine Meatballs. What’s fun about these little guys is that you put uncooked rice into the meat. After forming the meat into balls you pour some tomato soup over them, cover with aluminum foil, and bake for an hour at 350. The rice cooks and expands so that the meatballs look like little porcupines. The tomato soup adds a wonderful flavor and the surplus soup can be used as a sauce for the meatballs afterwards. This recipe is very fulfilling. I would recommend trying it out. Nana Folger’s Porcupine Meatballs Pre-heat the oven to 350 Mix in large bowl:
1.5 lbs ground beef
3/4 cup milk
1/2 cup rice
1 small onion, diced
healthy dose of freshly ground pepper Form the meat into balls and put in a 9×13 pan. Mix a can of condensed tomato soup with the required amount of water* and pour over the meatballs. Cover with aluminum foil and bake for 1 hour at 350 degrees F. *Presumably you could also just use 2 cups of rich creamy tomato soup. I trust you’ll do what needs to be done. Enjoy! I'll try these if We get your Ok .....as to being close to your Mom's style?...............................................Always looking to try something new.................so a recipe from Ma Arbutus ,would be neat.......................                                                      hf&rv

I have to admit that I have never had a hotdog in Calgary since I arrived here in 1978 unless I made the steamies myself and the fries that I do my own potatoes for fries - heat the oil hot then turn down low and put in the fries for about 6 minutes then turn the heat up and brown them.  I also make my own pizza because I prefer Montreal pizza and there are a few good restaurants in Calgary like Caesars and Hys which is now gone both good steak houses - but for hotdogs as soon as we hit Montreal first stop Atwater Market next stop since we are sort of in the neighbourhood Pauls on Charlevoix and Coleraine in the Pointe - we usually rent a place in Eastern Townships around Knowlton Landing so if I get a craving we drive to Sherbrooke and there is a place called Louis's that have great hotdogs and fries and for my taste buds better than Lafleurs although in a pinch they will do. If we drive from Eastern Townships to Brossards I stop at Lafleurs on Taschereau.  My sisters boyfriend used to own restaurants/deli in Montreal or Southshore and he would slice and vacupak a couple of pounds of smoked meat for me in half pound pouches keep one and freeze the rest.  But it is hard to even find decent rye bread here in Calgary. I have to say that my cooking repetoire improved dramatically when I arrived in Calgary and now my husband often says that much of what I make is better than any restaurant - I have to agree.  This has kind of sidelines dining out - finding good Chinese is not easy - I dont do Sushi or Mexican or Indian and my fav is Italian and there are a couple of good restaurants of the Italian gendre.  There is Joey's Only a fish and chip chain - adequate barely the fish is good but the fries - cripes I wanna give them a lesson totally tasteless.  Ditto for pastry places - there was a place Decadent Desserts - gone I think didnt last long Pssst Calgarians by and large know beans about cooking - a homemade meal in many many cases is a BBQ chicken from Co op and some crappy salads.  If I am pressed for time I will pick up the chicken and come  home and make the fries and St. Hubert or Swiss Chalet BBQ sauce and some frozen veg and voila a meal.

The only exception that I have found on the Calgary scene is Trawlers.  A great place for fish & chips on 14th Ave and 15th St SW.  It is owned by a greek family who ran a restaurant in Montreal for years when they first arrived in Canada.

Hello Shirley the Westcoast echo's your feelings of available food in Calgary,.but it has been getting steadily better over the years,..... As for variety ,I like lot's of different stuff,..which includes Mexican ( but you have to find the right place) & a little Indian,.However I can & do make some of each of that stuff,.mostly Mexican type stuff,in the way of Enchilada's both chicken or beef,....and some Curried dish's being Chicken or beef as well,... The Rye Bread deal ( well nothing ever seems ,just right,.but a few weeks ago I made some real Montreal Smoked Meat Sandwhichs,.and found some good rye bread,.of course I steamed everything,& I too had an already sliced - properly sliced- package of Smoke Meat 'en direct' from Montreal.......... Food is fun & always better when made at home rather than Restaurants,... don't forget almost all Restaurants have the same suppliers,& we've basically become 'cattle' in the way we line up at certain 'troughs' ( read in most restaurants ,nowadays) ...........but that's what makes the memory of certain foods from home ,.more appealing,......... Greeks Can Cook,........ I do not trust 'deep fried battered restaurant stuff' ....cause you don't need to mask fresh stuff ,regardless of what it is....................... ...I have to admit one fish ,I am no fan of is those ones on the trunk lids of some cars........................................hahahahahhaha        hf&rv

Here is what I do - I dig out a tall potabout 7-8 inch diameter filled with 1 inch or so of water - place weiners in water top with a metal collander or top part of double boiler into which I place the buns and place lid on the pot - bring water to a boil but dont boil the crap out of the weiners or they will split - usually I have pot of fries in the vat at same time - top with your fav toppings and voila steamies.

About my pizza well my husband says it is the best and others who have eaten it love it - one kid said that I make the best pizza and wings he has ever had.  Usually I buy the pizza shell at Safeways - I top with pizza sauce I buy it here in a squeeze bottle made by Primo - not too much sauce I spread it with a soup spoon add dash of oregano - top with 200 grams of pepperoni - I slice a very large green pepper and place the slices carefully in a large measuring cup8 cup size and just cover with boiling water (I have a hot tap) microwave for 5 minutes and drain and place on paper towel - layer the green pepper over the pepperoni - grab 5 large mushrooms or so and slice thin - top with about 1 pound of mozzarella cheese that I grate myself - meanwhile oven has been heating at 400 degrees I have a pizza stone and I have one of those perforated pizza pans.  While I have been preparing the pizza I have a tray of chicken wings in the oven at 350 degrees I use shake and bake honey garlic and I dont use the tips of the wings The pizza is a 12 inch and is very well dressed - I  remove the wings crank up the heat to 400 and bake in my convection oven for 12 minutes I might crank it up to broil and move the pizza to top shelf for 1 minute to give it that extra bubble cheese flavour - I buy the pizza shell and the cheese pepper and mushrooms & pepperoni and wings and come home and make dinner usually Friday night dinner with the wings and fries it is enough for 4 adults about 600 grams of wings without tips. Better than any pizza I have had in Calgary by a long shot.

Bigfellow we went to Trawlers for fish and chips tonight for dinner - not bad and certainly better than Joeys Only but not as good as the fish & chips we used to get in Montreal.  There was a fish and chip place in the West End just below St Antoine and Chatham fish and chips for .25 when we were kids.

Shirley the Fish n Chips on Wellington street or the one on Banantyne ave. where good.Wrapped in newspaper. Steve

Shirley, I think that Trawlers is the best in Calgary.  But it just doesn't hold a candle to the fish & chips from Verdun.  I used to go to Verdun Fish & Chips on Banantyne, it was the best. Part of the problem today is everything has changed in making fish & chips.  Transfat free oil might be better for us, but it doesn't taste as good.

Habsrule, My mother used to make them too and slice them into fingers, but I forget what she called them, I don't recall cheese dreams, but it could very well be.     Carole

Hi Trudy,   Thanks for the info. I was by there on Friday:   Shorty's Meat Company 6970 Lisgar Drive, Unit 1A Missisauga Tel 905 542 0002 Fax 905 542 8878   I spoke with Denis George who is the owner and from the Point. He carrys very good Creton (according to my french wife), McGary's sausages, homemade tortiere,  bernaise and a wide varity of different products from Quebec that you can't find here in Toronto. I dropped approx 50 bucks on different items and will report my findings, but I am very sure they are all good as the brands are well know from Quebec.   For those here in " The Big Smoke" , drop by and say hello. Gary says he gets a lot of demand for the goods and he willl let me know when his brother brings up his order of La Bell Fermiere sausages.   Nice shop, impeccably clean and worth the stop   rgds Keith Harrison

Hi Carole and Shirley, This is "habsrule"'s sister.  After seeing Shirley's comment about "cheese dreams" I tried google and found this recipe.  It seems pretty close to what I remember our Mum making, except she used bread instead of English Muffins.  If John's lucky his resident chef, wonderful wife Janice, will take pity on him and make them for him.  I may try them too.  No better memory than good cooking.  .... and great idea for this thread.   Pat   CHEESE DREAMS

3 English muffins, split in half, buttered
6 slices bacon, cut in half
6 thick slices tomato
6 thin slices processed American cheese

Place sliced English muffins and bacon on rack under broiler.

Toast muffins on one side and take from rack.

Broil bacon until crisp.

Top each muffin with a thick tomato slice, 2 broiled bacon strips and 1 thin slice of processed cheese.

Return to broiler and broil 5 inches from heat until cheese melts. Serve at once.

Servings: 6

Today I made myself an old favorite, corned beef hash.  My Granny used to make it for my uncle, my friends and I.  To me it is a reminder of my childhood.  The ultimate comfort food for me!

claroleca0 MSN said...

Bigfellow, how do you make your cornedbeef hash?       Thanks,  Carole

bigfellow6633 MSN said...

I make it a couple of ways. 1)  I take diced potatos that were boiled the night before.  I fry them in a pan.  I then add a can of corned beef and a diced onion.  I fry the mixture together stirring frequently.  For a variation I sometimes add diced peppers.    2) I take mashed potatos and mix in corned beef and onions.   I either form them into patties or just fry the whole mixture as is.

I was at Alberta King of Subs today and they are now searving steamies, potine in variations as well as smoked meat.  The smoked meat is not the greatest, but the hot dogs weren`t bad at all.   It is on Temple Dr at 52nd ST NE.

Before I forget, they also have white cream soda and spruce beer.

Keith   Glad you found Shorty's.  I love going there - not too far for me.  I live in Milton.  He has a good business going and lots of favs for us ex-Montrealers.  If you're ever having a crowd in and craving some steamies I would recommend renting the hot dog steamer from him.   Trudy

bigfellow6633 MSN said...

Okay, I broke down today and bought a restaurant counter top steamer... Now where are the hot dogs?... Time to order a brisket of smoked meat from schwartz's!!!!

shirleyb-h MSN said...

Wow you must really love hot dogs - what brand is it or can you post a picture or a link.  Might have to get one of these. Every once in a long while I get a craving for toasted hot dogs - well just the buns the weiners are always boiled for a minute or two - It is almost impossible to find those white on both sides hotdog buns - I did find them once before Christmas perhaps it was November but I have no idea where to find them again in Calgary. I have a panini press to make grilled cheese and toasted hot dogs. OK I have never made grilled cheese as I am not a fan of cheese and my husband doesnt consider kraft cheese slices real cheese.  I only cook with cheese - like swiss or monterey jack or creamed cheese and I might grate cheese on a casserole and of course mozza on the pizza lots a mozza but that is it for cheese for me.

Hi ShirleyBH,....try looking for a Weston's Bread Store,(distibutor) ,......Years ago I happened across a Weston's Bread Store ,that sold those Toated Hotdog buns,........here in Victoria ,I hadn't seen them in many years,.So of course I bought them & made some steamies, the old fashion way witha pot of water and a steamer/collander type top)...............hahahahaha They come out just fine,........However the old Weston Store disappeared & I have not seen them here for at least ten years or so.....but maybe in Your Neck of the Woods ,.you may be more successful,.....HF&RV

Hot dog buns. I buy the store baked buns (Co-op) that are not sliced. Slice them half-way down the middle and down each side in between. That makes them good "toastable" buns.

shirleyb-h MSN said...

Les I just googled counter top steamers and the ones that popped up were 3-4K - yup I guess I will be doing it the way I always did it - pot and collander and dont forget to watch the weiners so that they dont split - I usually fold up a linen tea towel and cover the buns so that they steam quicker. But ya gotta watch that the tea towel doesnt catch fire - dont ask me how many I singed. I think that I might have bought the쨍buns at Super Store (Presidents Choice) Usually I have hot dogs and homemade french fries with Coke of course but when I make toasted hotdogs I have coffee with cream and sugar and what we called shallots as kids (green onions) or spring onions.  My husband is not a big fan of hotdogs unless we are in Montreal and he knows I need several fixes - first one immediately upon arriving.

les__f MSN said...

Hi Shirley (3 or 4 K) for a Steamie,.I'll stick to the same method,..hahahaha  but Do you Remember that most Montreal Steamies were always topped with shredded cabbage, and slight pinch of cayenne ......  'tout garnie avex chou' ......of course the Fries were a must & a coke for sure,.then load up salt & vinegar .............................................All this talk of food & I have a Chicekn on the Rotisserie ,as we speak,& I have to go keep an eye on it,....( ni fries with it though,...Rice todat).........hahahahaha but I do have a packet of Swiss Chalet Powder to make a Sauce,..they are fine in a pinch,.but not like the old StHubert Sauce.........................................HF&RV

I have a friend who sells owns the Bagel place at the Farmers Market.  He sells smoked meat there.  I think that I've mentioned him before.  He had an extra steamer that he had only used once or twice.  I paid $500.  They are expensive.  But I work as Chef so this is an investment for me until I open my own place. as I said you can use it for hot dogs and smoked meat!

shirleyb-h MSN said...

I found St Hubert BBQ sauce in packs and cans at Walmarts.  Ha we are having chicken tonight too with rice and will make some St Hubert BBQ Sauce and vegs. Dogs love chicken and so do I.   Good buy on that Steamer - it was too cold to go to Farmers market on Sunday but for sure next week I am off to check out the bagel guy might just have to have smoked meat too.

shirleyb-h MSN said...

Les another thing that I found at Walmarts but cant find any more is Dainty Chinese rice comes in a can and there is a packet of seasoning that you mix with half cup of water.  I cut up some celery thin and some mushrooms and nuke it in a cup of water then add that with some frozen peas to the rice - kind of gives it that homemade touch and I use the half cup of water usually that all that is left after boiling the celery etc and add that to the rice and seasoning. Sobeys (IGA) had it for $2 it was .99 at Walmarts - another thing to add to my things to bring back from Montreal list.

Arthur Kent is running for MLA in my riding, Calgary-Currie.  I will post the date of a blitz that we are having for the riding because afterwards we will be having free smoked meat sandwiches for the volunteers from bagel place (I don't know the name of it).   Collecting kitchen and cooking equipment is my hobby and profession.

bigfellow6633 MSN said...

Do you know any good places for tortiere here in Calgary?   Zeller's also has St Hubert stuff in some of their stores in Calgary.

shirleyb-h MSN said...

Collecting kitchen stuff is my hobby too that and collecting sewing stuff.  Some things I had to have - vitamix mixer with extra hopper for grinding my own grain. Also my Zojirushi bread maker - also love the meat slicer not that I use it often but had to have it.
Can you buy rye bread from the bagel guy too.

Bon Ton Meat Market - 403-282-3132
I make my own tortiere but the only place I can think of that might have it is the BonTon meat market in Stadium Shopping Center (north side of 16 ave NW opposite Foothills) My husband wanted me to make a Lancashire Hot Pot - recipe calles for lamb kidneys and either lamb neck or shoulder lamb chops - I would use the shoulder chops but that Bonton place is where I would try to find the kidneys.

bigfellow6633 MSN said...

I make my own at Christmas and at work.  But sometimes I just like to buy one and eat it at home.  Thank you.

shirleyb-h MSN said...

Before Christmas I saw some Tortiere frozen not sure if it was Sobeys or CoOp or Superstore and it might have been Amaranth Health Foods - I dont think that I was at Safeways at that time so I will check out those places and let you know if it was just a one of before Christmas thing or what.  I found some Smoked Boneless Duck Breast made by Brandt and thought that I would splurge for New Years eve - $32 - we never got through it all and I was afraid that it would go off so I froze the rest - must dig it out and give it another go. One thing that I discovered was that duck livers are delicious - not that I know personally but I bought a huge package at the Brome Lake Duck place last year when we were in Eastern Townships - I planned to cook them for the dogs but while my husband was cutting up the sautéed livers he tried some - had to slap his hands to keep him from having more than a taste.  I DO NOT eat liver and usually we BBQ it for the dogs and I have dehydrated pork liver for my first Maltese Dog - boy what a stink - did it in the garage.  Dont give them liver very often because it is too strong for the smallest two (they weigh 5 and 6 pounds) sometimes gives them the trots so they get it maybe every 2 months.

bigfellow6633 MSN said...

Brome Lake duck pate is fantastic!!!!  I buy it whenever I go home.  Duck liver is wonderful.  It is my second favorite after fois gras.

Regarding your tortiere pies, I have not seen any here in Calary, so I made my own like I usually do.I made 20 this Christmas and they were so good. You should make some, they are not hard to make, just time comsuming.   DB ( Kyshagirl)

Shirley, I'm not a fan of cheese (dairy) either. Never have been and most people I know don't understand my thing with cheese, I don't like the texture, smell & taste,  and it doesn't settle well with me either. Mozzarella for pizza used in moderation is the only time I eat it. I'm not sure if there are any Loblaws affiliated stores in Calgary, but that's where I have bought those hot dog buns, they are made by Wonder. I still have some in the freezer. I found Dainty Rice at Zellers on sale, sometimes I find it for .99 at Food Basics. Do you have A& P? They usually have it in stock. I like rice pilaf the best and it's the hardest to find.   Carole

basically it's shredded cabbage,.add some 'coleslaw dresssing' if you need to ,....but generally shredded cabbage,.and a sprinkle of Cayenne...Most coleslaw (shredded cabbage ) wasn't too soggy ,so it's up to you from there...........
